Hebridean Hogget on the Great British Menu
Chef Paul Askew from the Art School restaurant in Liverpool is involved in the next series of the BBC's Great British Menu (GBM) which will be shown on UK TV in 2017. He is a North West Food Champion and one of the region's best Chefs. Paul is passionate about having seasonal, local produce on his menu at the Art School. He already has Hebridean hogget on one of his menus: a plate of Callum Edge's Hebridean hogget to include pan-roast loin, hay roast rump, saute sweet breads and confit shoulder.
Callum of Edge & Son the Rare Breed Butcher on the Wirral is sourcing Hebridean meat for Paul's menu on the programme. Callum is an accomplished butcher and a champion of rare breed meat.He was featured in the Spring issue of the RBST magazine, The Ark, which focussed on selling meat. Callum runs a small abattoir behind the butcher's shop and his concern for the welfare of the stock coming into it is outstanding. He buys directly from local producers, often coming out to see the animals on farm.
Callum has been in touch with the local Hebridean breeders who normally deal with him and has been able to source enough animals to supply lamb, hogget and mutton for the series. There will be a photo shoot at one of the breeder's farms to show the sheep in all their glory on the hoof.
This should be great publicity for our very special breed of sheep.

The Annual Scottish Show & Sale at Lanark Auction Mart will be on Friday 2nd. Sept (Sheep can be unloaded from 4 pm on Thurs).
This year it is proposed to include a sale of cross bred Hebridean lambs and shearling gimmers (no wedders) - to be sold immediately by the pen after the pure bred sheep. This will be great opportunity to promote our breed to a wider, commercial market but the mart need to assess the viability of this proposal. Therefore, if you are interested in selling your crossbred sheep here, please contact us with details of the cross and approximate numbers that you might put forward for sale.
In addtion, a Society dinner and social evening will be held at The New Lanark Hotel on the Thursday night prior to the Sale. If interested in coming to this, please contact us with numbers . Menus will be sent out at a later date.
